Mango Soup almost like in Hong Kong

Several times I told you about typical desserts in Hong Kong. Cong Sao Star Dessert, Dessert Lucky or famous Honeymoon Dessert 滿記甜品, all offer versions of mango soups more delicious as each other. In Paris, I don’t know any restaurant that offers. There is only the Chief Frank Xu in Shang Palace offering a remarkable and scrupulously authentic Mango soup with grapefruit and sago pearls 杨枝甘露.

To avoid going into a palace or around the world, today I propose to you two simple mango soup recipes. The first is based on evaporated milk and the second based on coconut milk. I think the second version is closer to the western taste but the idea is to give you basic preparations that you can decline endlessly.

Classic Mango Soup for 6 people

Ingredients

  • 2 large Thai ripe mangoes
  • 4 gm Agar
  • 200 ml Unsweetened evaporated milk
  • 30 gm Caster sugar
  • 300 ml Water
  • Mint leaves

Recipe

  • Put the evaporated milk in a bowl and set aside 15 minutes in the freezer.
  • Peel two mangoes carefully. Cut in half and remove pits.
  • Mix the equivalent of a mango and a half to obtain a homogeneous mango coulis.
  • Set aside 3/4 mango coulis.
  • Add 300ml cold water into the blender with the rest of the coulis and mix again.
  • Filter the Water / Mango preparation, put into a pan and add the agar.
  • Heat the Water / Mango / Agar preparation and simmer gently for 3 minutes.
  • Transfer mixture to a container of 1 cm in height and put in fridge for about 2 hours.
  • Remove the evaporated milk in the freezer and add the caster sugar.
  • Place the mixture in a mixer to obtain a smooth cream.
  • Add the mango coulis into the preparation and mix gently.
  • Cut the remaining half mango into cubes.
  • Remove the jelly of the fridge and also cut into cubes.
  • To serve, mix in each bowl, cream mango, diced mango and diced mango jelly.
  • Add a few mint leaves for decoration.

Revisited Mango Soup for 6 people

Ingredients

  • 2 large Thai ripe mangoes
  • 50 cl Coconut Milk
  • 40 gm Rock sugar
  • 2 Kaffir limes
  • 1 Lemongrass
  • 1 Grapefruit
  • 50 gm Strawberries
  • 6 gm Agar
  • Mint leaves

Recipe

  • Peel two mangoes carefully. Cut in half and remove pits.
  • Mix the equivalent of a mango and a half to obtain a homogeneous coulis.
  • Set aside 3/4 mango coulis.
  • Add 300ml cold water into the blender with the rest of the coulis and mix again.
  • Filter the Water / Mango preparation, put into a pan and add 4gm Agar.
  • Heat the Water / Mango / Agar preparation and simmer gently for 3 minutes.
  • Transfer mixture to a container of 1 cm in height and put in fridge for about 2 hours.
  • Mixer strawberries with water. Achieving jelly the same manner as for the mango but only with 2 gm of Agar.
  • In a pan, over low heat for 15 min 30 cl of water, rock sugar, the juice of kaffir and lemongrass stick.
  • Filter the syrup and mix it with coconut milk and mango coulis to obtain a creamy soup. Add the grapefruit in small pieces and mix.
  • To serve, mix in each bowl, some cream mango with coconut milk and grapefruit, strawberries jelly, mango jelly, mango chunks and mint leaves.
