Will, the new bomb of Chef William Pradeleix
William Pradeleix is a traveler Chef. A moment at the St. Regis Bora Bora Hotel, he worked with Hélène Darroze at The Connaught in London before taking charge of the kitchens of the insertion restaurant Manger in Paris. This experience has been short-lived. Difficult, in my opinion, for this kind of Chef, to fully navigate into this strange concept where nobody understood the coherence of the menu… Even then, he said everywhere that his dream was to open his own restaurant. This is now done with the appropriately named Will. On the occasion of a recent lunch, I tried my luck in this newborn restaurant close to Place d’Aligre in the 12th arrondissement.

Should Go ? Here’s a Chef who had champing at the bit in the kitchens of others and gives us a brilliant illustration of his talent for cooking. Chef William Pradeleix offers in his restaurant a singular cuisine where asian products underscore a perfectly french technique. One advice, go for the Will before address become full !

Expensive ? Will has one of the best value for money ratio currently in Paris. à la carte, a full meal costs 45 €. Same price for the tasting menu in the evening.

Résumé : Adventurer, Chef William Pradeleix worked for a long time for others and especially in London with Hélène Darroze. With Will, he created his first restaurant near the Place d'Aligre in the 12th arrondissement. Its singular kitchen combines with panache and verve applied asian seasonings with a perfectly french technique. I recommend this place without hesitation. 19 € for lunch. 45 € for dinner à la carte.
